BBQ Lamb Ribs with Stir-Fry Veggies and Rice
This juicy and tender recipe is one of our personal favorites. Start with a rack of Orange Creeks Farms delicious lamb ribs, seasoned with salt and pepper. Place the ribs in a parchment lined pan, meaty side up, cover with another piece of parchment then cover it all with foil. Heat the oven to 275F. Cook the ribs for 1hr 45mins. When you pull them out remove the foil and the top parchment and start spreading on your go to BBQ Sauce (one of our favorites is a Korean BBQ!). Make sure to cover both sides well! Once covered place the ribs back in the oven for another 15 mins, then finish off by setting the oven to broil to get that amazing, caramelized action on top! Nothing better than the sound of that sizzle! To really round off the meal add some of your favorite stir-fry veggies on rice! This meal is sure to wow everyone!

Loaded Pork Nachos
Ingredients
• 4-5 lbs Fresh Pork Hocks (Frozen)
• 4-5 cut up yellow and red bell/sweet peppers
• 1 TBSP Red Pepper
• 1TSP Garlic Salt
• 1 Spoonful of Fried Chili Paste
• 1 TBSP Minced Onions
• 1 Cup Water
* -This combo gives a mild to medium heat, adjust chili paste and red pepper to taste.
Cooking Instructions
• In an Insta-pot Combine all ingredients.
-Could also be cooked in a crockpot, just set it in the morning for an easy dinner after work!
• Set timer for 45 minutes at high pressure.
• Meat will come out tender, juicy, and fall off the bone delicious.
Meat can be used to top Nachos or Pork Tacos and finish your meal by adding your preferred veggies! Our favorites are spinach, tomatoes, avocado, cheese, and our favorite taco sauce!

Lamb/Goat Roast with Veggies
Ingredients

1# Potatoes
-
3 sweet potatoes
-
3 large tomatoes
-
2 red peppers
-
1 bundle asparagus
-
1 red onion
-
2 cups pumpkin cubes
-
1 garlic clove
-
4-6# lamb/goat roast
-
1 lemon
-
1-2 bay leaves
-
Olive Oil
-
Timbo's Greek Seasoning
Cube/Cut up all the veggies and layer in the bottom of a pan.​
Add oil to evenly coat veggies and season with Timbo's Greek Seasoning. Mix everything up to make sure it is all evenly coated.
Add roast on top of the veggies (or can be kept in a separate pan if you prefer to cook separately). Coat and rub in the oil in seasoning over the roast.
Cut small slits in the roast to add garlic cloves and top with bay leaves.
Squeeze lemon over the roast and leave in the pan for extra flavor.
Use 1 cup of Red Wine or a cup of water to pour over the roast and veggies.
Top with tinfoil and bake at 320F for 3hr 45min.
The last 15 minutes pull the tinfoil and brown the roast at 470F.

Pulled Pork Sandwich By Tim V.C.
Tim's delicious pulled pork is made with our amazing Berkshire Pork Roast and rubbed with Timbo's (a favorite of ours as well from Omaha) Coffee Chili Rub. Sit it in the fridge over night to soak up all that goodness. Place in a slow cooker, on low heat, with some bay leaves and sage, for about 6 hours. Shred it and top with your favorite BBQ Sauce, such as the amazing RJ's BBQ sauce (another great local from Omaha)!
